Mother’s day menus

Just in case you’re still trying to come up for a mother’s day menu to cook for mom, here are a few potential menus, two for brunch and two for dinner.  Happy mother’s day tomorrow!

Brunch 1:

Rosemary lemon sparklers

Savory pear and gouda Dutch Baby

Brown butter rhubarb cake

Brunch 2:

Hot chocolate

Baked eggs with spinach and za’atar

Pear and fig morning muffins

Dinner 1:

Spinach pancakes with lime yogurt sauce

Lamb chops with pesto

Sauteed cauliflower with bread crumbs

Lemon tarragon green bean salad

Rhubarb soup

Dinner 2 (vegetarian):

Beet salad with mint yogurt dressing

Tart with leeks, greens, and Cantal cheese

Lemon and mustard asparagus

Chocolate pudding
